This Gyuto is hand-forged and has a 206 mm length, made with a 1095 core hardened to ~61 HRC and a softer 15N20 cladding. Acid etched to bring out the transition between the two steels, there is also a visible auto-hamon along the blade.
The knife has been heat-treated in a 7-step process to ensure uniform grain size and optimum results. The grind is a full height grind, with a significant distal taper to create a dynamic cutting feel. Thin and precise at the tip with a more workhorse grind at the heel.
