This knife is bridging the small gyuto / large petty boundary, and has been forged from 26C3 clad in 410 Stainless with a midweight grind and taper and heat treated to a hardness around 64 HRC. The bevel is stone ready with a kasumi finish using mud from a natural finishing stone, and has slight convexity. The flats have a kurouchi finish with the texture remaining from the forging process.
