245x50 Rentetsu Gyuto
This Rentetsu Gyuto has a cutting edge of 245mm and a heel height of 50mm. It has a heavy distal taper with a very thin tip, creating a lightweight knife with a laser profile. The handle is a nicely figured walnut from Oregon and the wrought iron was taken from an old ship anchor, given to me by a friend in the community. It was pressed down to reduce its diameter, twisted slightly, and then re-flattened/drawn out to prepare it for the knife. After cleaning it up from the initial prep work, it was then forge welded around a 26C3 core to approximate shape and geometry with further refinement to the thickness and taper through cold-forging and final profile via grinding. This gyuto has been ground to a full convex grind, and completely stone finished, progressing from coarse stones to very fine stones, deep etched to bring out the details in the wrought iron cladding, and then finished on an Ohira awasedo. After that, I cut and prepared a small fingerstone from the same Ohira to blend together the convexity and give it its final polish. As always, all prep work, lamination, forging, heat treat, finishing, handle work, and anything else was completed by myself in house.
